Blueberry Pancakes from scratch

If you are a follower of my daughter's blog you will know that I am staying with her for a few weeks. Last week, she hinted to me, not once but three times, there were blueberries in the fridge that should be used before they go bad. "Mum you should make blueberry pancakes for breakfast." Sounds good, but getting around to doing it is another story.

Well I did get around to it on Saturday and actually surprised her with some hot steaming pancakes that smelt so delicious when I was cooking them, that I could hardly wait until I'd finished. That finally came when I'd served three others who were happily chomping away on them while I stood over the stove. Thank goodness for coffee!

I make my pancakes from scratch, meaning no pre-mixed flour base.

  • 2 cups flour
  • 2 heaping tsp baking powder
  • 1 egg beaten
  • pinch of salt
  • 1 tsp vanilla
  • 1/2 tsp cinnamon
  • 1 3/4 - 2 cups water
  • 1/2 - 3/4 cup blue berries

The pancakes smelled so delicious that everyone was soon up for breakfast.
