I've been trying to eat healthy, well I usually do but probably not as healthy as I should. I've decided I really should eat more fruit and vegetables. Today I want to share with you one of my favorite veggies, stuffed eggplant. I added a little salad on the side.
Stuffed Eggplant Recipe
- One Eggplant cut in half lengthwise – scoop out center, leaving some flesh in – drizzle with olive oil.
Mix together the following:
- Chopped up eggplant that was scooped out
- garlic (lots)
- Italian sauce or tomato sauce
- onion diced up fine
- mushrooms chopped up
- salt & pepper
- chopped fresh tomato bits or sun-dried tomatoes (optional)
Fill eggplant halves and top with Parmesan cheese.
Bake at 325 degrees for 45 minutes or until tender.
It wouldn't be complete without a glass of wine - try cranberry and wine, it makes a great drink especially when you are eating in the middle of the day and still have work to do <grin>
